Locally, the White Peony is called - Pai Mu Tan.
The white tea is harvested early in the growth cycle of the tea leaf, before the leaf opens completely and while the leaf has a white, fuzzy texture that gives results in its name - white tea. The resulting tea is free of tannins and has a light, refreshing quality not found in other varieties of tea.
Preparation: Use 1 teaspoon of tea. Bring water to a boil. Steep tea for 3 minutes.
Size: 3 ounces - enough for approximately 40 cups.
